Strawberry Rhubarb Pie

Filling Ingredients

  • 1 lb strawberries, chopped
  • 1 lb rhubarb, chopped [ENG]
  • 1 c sugar
  • 5 T cornstarch
  • 1 T lemon juice

Filling Method

  • Mix the fruit, sugar, cornstarch and lemon juice in a bowl
  • Let it sit for 20-30 minutes to extract the moisture from the fruit

Pie Ingredients

  • The filling
  • Half of the Pie Crust recipe
  • (Optional) some pats of butter
  • One beaten egg yolk
  • Sugar

Pie Method

  • Once the bottom layer of crust is in the pie pan, use a slotted spoon to get the fruit minus the liquid into the pie shell.
  • (Optional) dot the filling with extra pats of butter
  • Transfer the top crust to the pan, trim the excess dough off, and crimp the top and bottom together, rolling the excess underneath so there’s no crust hanging past the edge.
  • Use a fork to go around the edge and press in to further crimp and create the nifty little ridges
  • Brush the top of the crust with the beaten egg yolk
  • Sprinkle sugar on top
  • Cut slots in the top crust so the steam can escape
  • Bake for 15 minutes at 425, then 50 minutes at 375
