Also called “drinking vinegar”

Ingredients

  • 1 lb fruits and berries
  • 1 c sugar
  • 1 c water
  • optional: add a bit of lemon juice and/or vinegar
  • optional: add spices (e.g., cinammon) or herbs (e.g., basil)

Method

  • bring to boil and simmer for 20-30 min
  • add 4-6 oz organic cider vinegar
  • strain twice through wire mesh strainers into flip top bottles or mason jars

Usage

Mix with soda water or regular water, or take straight by the tablespoon or shot.

Variations

  • Experiment with different fruits and berries.
  • Try different mixtures, e.g., mix red and black berries, mix in citrus/apple
  • Add aromatics like citrus zest, ginger, chili, pepper
  • Try proportions of different vinegars, esp balsamics

Mixed berry

  • 12 oz raspberries
  • 6 oz strawberries, sliced
  • 1 apple, cored and chopped
  • 1 orange, peeled and chopped
  • 2 sticks cinammon
  • 1 c sugar
  • 1 1/2 c water
  • 2 T lemon juice
  • 1 T cider

Cook 35 minutes, add 1 oz lemon juice and 4 oz cider, strain into bottle
