Ingredients

  • 156 g flour (1.25 c)
  • 3/4 t salt
  • 354 ml milk (1.5 c)
  • 3 large eggs (4?)

Method

  • Mix flour & salt together in bowl

  • Lightly grease the popover pans.

  • [-75] Preheat oven to 400.

  • [-60] Heat milk to 120.

  • [-52] add milk & eggs to flour/salt mixture

  • [-50] Whisk batter until mostly smooth, a few lumps are ok.

  • [-47] Pour into popover pans.

  • [-45] Bake 40-45 minutes.

  • [0] Serve

Notes

Reheat for 5 minutes at 300, 7 minutes if frozen.

This recipe makes 6 decent-sized popovers. Easy to scale this recipe down to make popovers for two with a single egg!
