Persian Chicken

  • 2 chicken breasts (or 4 chicken thighs)
  • 4 T olive oil
  • 2 t turmeric
  • 1 t salt
  • 1/2 t paprika
  • 1/2 t cayenne
  • 1/4 t cinnamon
  • 1/4 t allspice
  • 1/2 t black pepper

Method

  • If using breasts, slice them into two thin fillets.

  • Mix the oil and seasonings into a paste, dredge the chicken in the paste and marinate for several hours or overnight.

  • Bake at 400F (or 375F w/convection) for 35-40 minutes.
