Ingredients
- 125 g unsalted butter
- 125 g caster sugar
- 1 t vanilla extract
- 3 T golden syrup
- 1 egg
- 350 g all purpose flour
- 50 g malted milk powder
- 1/2 t baking soda
Method
- Preheat oven to 180C (=356F)
- Line two large baking trays with grease proof paper - set aside.
- In a large bowl beat together the butter, sugar and vanilla.
- Add the syrup and the egg to the mixture, and beat.
- Add the flour, malted milk powder and baking soda and mix thoroughly - it should all come together as one large ball.
- Divide the dough into four equal parts. Put one piece between two sheets of grease proof paper and using a rolling pin, roll the dough to a thickness of about 1/8th inch (2.8mm)
- Remove the paper and cut into biscuit shape size rectangles. Use the edge of a sharp knife to flute the edges. Or use cookie cutters for holiday shapes!
- Place cookies in the baking tray
- Optionally, put the baking tray in the freezer/fridge for about 10 minutes.
- Bake for around 10-12 minutes then cool.
