Hash Browns Potatoes
Ingredients
- Two Russet Potatoes
- 2-3T Tallow, Lard, Bacon Fat, or Butter
- Salt & Pepper
Method
- Peel potatoes
- Grate potatoes using a box grater
- Spin shredded potatoes in a salad spinner to remove as much moisture as possible.
- Heat fat in large cast iron skillet to 350-375F
- Spread potatoes evenly in a thin layer over the whole skillet
- Add salt & pepper
- Cook for about five minutes (peek under to see if they’ve browned enough)
- Use two spatulas to flip the entire thing, or cut in half and flip each half.
- If it’s too dry, you can add a little more fat at this point.
- Cook for another five minutes or so.
