Hash Browns Potatoes

Ingredients

  • Two Russet Potatoes
  • 2-3T Tallow, Lard, Bacon Fat, or Butter
  • Salt & Pepper

Method

  • Peel potatoes
  • Grate potatoes using a box grater
  • Spin shredded potatoes in a salad spinner to remove as much moisture as possible.
  • Heat fat in large cast iron skillet to 350-375F
  • Spread potatoes evenly in a thin layer over the whole skillet
  • Add salt & pepper
  • Cook for about five minutes (peek under to see if they’ve browned enough)
  • Use two spatulas to flip the entire thing, or cut in half and flip each half.
  • If it’s too dry, you can add a little more fat at this point.
  • Cook for another five minutes or so.
