Green Chili Corn Bread
Origin: Compass Restaurant, Phoenix, AZ
Ingredients:
- 1 lb butter
- 2 cup sugar
- 2 cup cornmeal
- 8 eggs
- 7 oz chopped Anaheim chiles
- 28 oz cream corn
- 3 cup all purpose flour
- 2 T baking powder
- 2 T salt
- 6 oz grated cheddar cheese
Method
- Cream the butter, sugar, and cornmeal
- Add eggs one at a time – mix until incorporated
- Add chiles and cream corn – mix until incorporated
- Add flour, baking powder, and salt – mix until incorporated
- Add cheese – mix until incorporated
- Preheat oven to 300 degrees and coat pan with pan spray
- Divide mix into two 6" x 8" x 2" pans and bake approximately 1 hr until a toothpick inserted into the middle comes out clean
- Remove from oven and cut into desired serving size
