Green Chili Corn Bread

Ingredients:

  • 1 lb butter
  • 2 cup sugar
  • 2 cup cornmeal
  • 8 eggs
  • 7 oz chopped Anaheim chiles
  • 28 oz cream corn
  • 3 cup all purpose flour
  • 2 T baking powder
  • 2 T salt
  • 6 oz grated cheddar cheese

Method

  • Cream the butter, sugar, and cornmeal
  • Add eggs one at a time – mix until incorporated
  • Add chiles and cream corn – mix until incorporated
  • Add flour, baking powder, and salt – mix until incorporated
  • Add cheese – mix until incorporated
  • Preheat oven to 300 degrees and coat pan with pan spray
  • Divide mix into two 6" x 8" x 2" pans and bake approximately 1 hr until a toothpick inserted into the middle comes out clean
  • Remove from oven and cut into desired serving size
