Golden Syrup
Ingredients
- 4 c sugar
- 1 c water
- 1 T lemon juice
Method
- Gently mix sugar and water in a saucepan
- Bring to a simmer
- Gently stir in lemon juice
- Simmer for ~40 minutes or until golden in color and somewhat thickened. DO NOT STIR.
- Cool and place in a sealed jar.
Notes
If the syrup gets too hard, reheat it with a bit of water to soften it and make it flow.
The reason you don’t stir is because you don’t want sugar crytals to form on the side of the pan; this can cause a chain reaction where the entire batch of syrup crystallizes.
