Enfrijoladas
Flavored Beans
Ingredients
- 2 c cooked Peruano beans (or Black, or Pinto)
- 1/4 onion
- 1 garlic clove
- 1 chipotle in adobo
- pinch of Mexican oregano
- 1/2 t salt
- 1 c stock (or water)
Method
- Saute onion and garlic in 1T oil over medium heat until softened
- Add cooked beans, chipotle in adobo, salt, oregano, and stock
- Mix well and blend in mixer or using immersion blender.
- Check for salt level
- Simmer for a few minutes until mixture is thick enough to cling to tortillas
Enfrijoladas

- the Flavored Beans
- finely chopped raw onion (optional)
- Queso Fresco (optional)
- Crema (optional)
- cilantro (optional)
- lime (optional)
Method
- Warm up the corn tortillas in the oven (or microwave). Alternatively, you can flash fry them in a thin layer of oil.
- Coat the tortillas with the flavored beans by using tongs to dip them into the pan of beans
- Make Enfrijoladas by folding them in half (or rolling them up) with a filling mixture of your choice
- Spoon more bean mixture over the top and more toppings (cheese!) if you wish
- Bake them at 400 for 5 minutes or so
