Egg Fortwich

Ingredients
- 2 slices of plain bread
- 1 large egg(or 2 small ones)
- chopped red and spring onions
- salt and pepper
Method
- oil a wide frying pan well
- crack the egg(s) in a bowl and beat it lightly
- add in the onions
- pour the egg mixture in the pan, spread it out evenly
- place the slices of bread on top of the egg
- when the bottom is ready, flip the eggs and the bread
- let the bread toast while you season the egg
- fold over one slice of bread, so that the egg becomes the filling
- slice in half and serve
