Creamy Pasta Sausage
Ingredients
- 1 lb ground italian sausage
- 1/2 lb pasta (shells, penne)
- 1 T olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 shallot, chopped
- 1/2 t crushed red pepper
- 1/2 t salt
- 2 c heavy cream
- 2 T fresh basil, chopped
- 8 oz frozen spinach
- 1 c shredded parmesan cheese
Method
Cook the penne pasta al dente in a large pot of salted boiling water
Saute the onions, garlic, shallots, salt, and crushed red pepper over medium high heat until they’re translucent, about 5 minutes. Remove them to a bowl.
Saute the italian sausage over medium heat until it starts to brown, about five minutes.
Return the onions mixture to the pan
Add the frozen spinach and basil and cook for a minute or so until the spinach has thawed and the mixture is hot.
Turn the heat to medium low and add the cream. Bring to a simmer and cook for about three more minutes.
Stir in the parmesan cheese until melted. Stir the pasta into the sauce.
Serve immediately.
Notes
This version uses half of the amount of pasta as the original, adds basil, and replaces 5oz of baby spinach with 8oz of frozen spinach. You could easily use more.
