Cornbread (sweet)
Preheat oven to 400F.

Ingredients
- 1 c flour
- 1 c corn meal
- 2/3 c sugar
- 3.5 t baking powder
- 1 t salt

Mix well in large bowl

- 1 egg
- 1 c milk
- 2/3 c melted butter
- 2 T chopped crystallized ginger
- 2 oz hatch chiles (half of a 4 oz can)

Method
- Beat the egg whisk in the milk, butter, ginger, and chiles
- Mix the liquid ingredients into the large bowl with the flours
- Melt 2 T butter into 12" round cast iron pan, pour batter into pan.
- Let it sizzle on medium heat for a couple of minutes
- Bake at 400F for 20-25 minutes.
