Char Siu Pork

Marinade
Ingredients
- 3/4 T brown sugar
- 1 1/2 T honey
- 1 1/2 T hoisin sauce
- 1 t oyster sauce (or fish sauce)
- 1 1/2 T soy sauce
- 1/2 t five spice powder (cinnamon, cloves, black pepper, fennel, star anise)
- 1/2 t sesame oil
- 1 T oil
- Few drops red food colouring, optional (for “authentic” look)
Method
Place the Marinade ingredients in a small saucepan and bring to simmer for just 30 seconds, then set aside to cool.
Pork
Ingredients
- 1 lb pork tenderloin
- 1 T honey

Method
Marinate the pork, using the ziplock bag technique or the vac’n’seal method.
Bring the pork to room temperature.
Preheat oven to 350F.
Line a baking tray with foil and place the pork on the rack.
Tuck the thin end of the tenderloin underneath so the whole piece is roughly the same thickness.
Mix 1 T honey into the marinade.
Dab the top generously with marinade.
Roast for 25 minutes or until the internal temperature is 145 - 160F, flipping and basting halfway through.
Switch to broiler/grill, and baste/grill until you’ve used all the marinade and it is nicely charred and caramelized.
Allow to rest for 10 minutes before slicing.
