Chai Spice Powder

Ingredients
- 20 g green cardamoms
- 8 g stick cinnamon
- 5 g nutmeg (1 whole)
- 1 whole star anise
- 3 g black cardamom (or 2g seeds)
- 8 g black peppercorns
- 6 g whole cloves
- 9 g fennel seeds
- 14 g dried ginger
Method
- Crush the cinnamon into smaller pieces in a mortar & pestle
- Crush the star anise into smaller pieces in a mortar & pestle
- Crush the nutmeg into smaller pieces in a mortar & pestle
- Peel the black cardomom
- Put the cinnamon, green cardamom, black cardamom peels, and star anise in a cast iron skillet over medium-low heat. Roast, stirring occasionally until it has darkened a bit and is getting fragrant, about 3 minutes.
- Add the peppercorns, fennel, cloves, and black cardamom seeds. Roast for another 1-2 minutes.
- Add the nutmeg and roast for another minute
- Add the ginger powder and turn off the heat, stir it all together for another minutes.
- Let it cool and grind the mixture in a grinder or food processor.
- Filter the ground mixture through a strainer to get just the fine powder. You may have to grind the residue again, up to three times.
- Store it in an airtight jar and use it to make [Matcha Chai Lattes].
