Beet, Orange, Cucumber Salad

Ingredients
- 3-4 medium beets
- 1 orange
- 1 cucumber
- 1 shallot
- 1 oz lemon juice
- 1 oz maple syrup
- 2T chopped fresh mint
- 1/2 t dried dill
- salt & pepper to taste
Method
- Cook the beets, cool in water, peel, then cut into bite-size cubes.
- Cube the orange
- Peel, deseed the cucumber, salt it, let it rest for 15 minutes and drain the liquid
- Slice the shallot thinly
- Add the beets, orange, cucumber, shallot to the bowl.
- Add the maple syrup, lemon juice, mint, and dill to the bowl
- Mix well, add salt & pepper to taste
- Serve with crumbled blue cheese and toasted pine nuts
