Beet, Orange, Cucumber Salad

Ingredients

  • 3-4 medium beets
  • 1 orange
  • 1 cucumber
  • 1 shallot
  • 1 oz lemon juice
  • 1 oz maple syrup
  • 2T chopped fresh mint
  • 1/2 t dried dill
  • salt & pepper to taste

Method

  • Cook the beets, cool in water, peel, then cut into bite-size cubes.
  • Cube the orange
  • Peel, deseed the cucumber, salt it, let it rest for 15 minutes and drain the liquid
  • Slice the shallot thinly
  • Add the beets, orange, cucumber, shallot to the bowl.
  • Add the maple syrup, lemon juice, mint, and dill to the bowl
  • Mix well, add salt & pepper to taste
  • Serve with crumbled blue cheese and toasted pine nuts
